Minced Meat Noodles

Minced meat noodles were originally "sister-in-law noodles". As early as the Tang and Song dynasties, unmarried women were called "nu wa" and they were called "new daughter-in-law" after marriage. The bride’s noodle making skills will be tested through making noodles at noon the next day after marriage. The word "sao" is mainly because the bride feels embarrassed with a flush face when she cooks the first meal in the new environment. Therefore, the folks call it "minced meat noodles", which has been circulated in Jizhou for a long time. The craftsmanship of minced meat noodles includes mixing noodles, rolling noodles, cutting noodles, cooking noodles, pouring noodles, and making ingredient has careful study. Minced meat noodles were rated as the fifth batch of representative projects of intangible cultural heritage in Linfen.
